Preserved Lemons: An apocalypse treat for the well prepared.

“Why should I make preserved lemons?”

As you all know, it’s 2012 and the world will soon come to a fiery end. And truth be told, when that day comes the food supply is going to start dwindling pretty fast. Eventually, the Japanese robots will become self aware, the zombie population will start to explode and everyone will be killing each other over last weeks rotten apple cores. But not you, my friend.  You will be safely nestled in your underground bunker cleaning your guns and snacking on preserved treats you learned how to prepare from Cat & Mara Make Food. So, you’re welcome. 

“Well, wouldn’t it make more sense to preserve something more nutritious than lemons? It’s like a whole damn cup of salt you put in there. I mean, I’m going to get pretty thirsty after eating them.”

Ok, first of all, we’re not interested in arguing about this.  But since you are being so persistent I suppose we can expand on it. Second of all, we’re pretty sure it goes without saying that if you are safely nestled in an underground bunker, you already have a large water supply, so your concern is ultimately invalid. Third, lemons ARE nutritious, so you can use this time to get back to the weight you were in high school.

I’m sure by this point everyone is convinced they should be preserving lemons, so let’s just move on with the recipe. 

(And for the record, we do feel that one will need more than preserved lemons when the world ends.  But don’t worry because we have plenty of recipes for canning (see pickle post) and preserving that we will share with you. We just hope to publish all of them by December 23rd. And DONT FORGET, the internet will most likely be SUPER SLOW when it hits, so be sure to print these recipes.)

Delicious! Now what do we do?!  Well, keep in mind a little bit goes a long way.  We like to dice them up real small and throw ‘em in a salad.  You can also use it to flavor rice/grain dishes, or lemon-up your meat dishes, especially fish and chicken!  If you hate all those ideas, check out this website.  Enjoy!
